The morning bakery window

A weekend pairing from the bakery aisle: strong tea, a glazed donut, and ten quiet minutes.

Weekend breakfast is allowed to be a little sweet. Strong English breakfast tea, a glazed donut from the bakery case, and ten minutes before anyone else is awake. That is the whole recipe. It is also the whole point of a grocery store that still bakes in the morning instead of thawing at noon.

We get asked, every Saturday, which donut “goes with” which tea. The honest answer is: a robust breakfast blend and whatever glaze is still shiny. Pairing is a magazine word. Hunger is the actual brief.

Heat the mug first

Pick a robust breakfast blend — Assam-forward, not a wispy afternoon tea. Warm the mug with kettle water, dump it, then steep four minutes. Let the bakery box stay closed until the kettle clicks. A donut next to a cooling mug is how glaze turns to paste.

Water, leaf, time

  1. Boil fresh water. Reboiled water tastes flat because it has already given up its air.
  2. One teaspoon per mug, plus one for the pot if you are sharing.
  3. Four minutes, covered. Three is timid. Six is stew.
  4. Milk after the tea, not before — you want to see the color you actually made.
  • Add eggs and berries if you are ordering the rest of breakfast.
  • A second donut is for sharing, or so you tell yourself.
  • Keep the tea bags in a tin, not the original paper box, once opened.
  • If you buy loose leaf, a simple infuser beats a ceremony you will not repeat.
Breakfast is the one cart that is allowed to be a little sweet.

What to grab in the bakery aisle

Look for glaze that still catches the light. A matte donut was baked yesterday and sat in the case overnight. Yeast donuts beat cake donuts next to strong tea — the chew stands up to tannin. If you want chocolate, get a thin icing, not a thick frosting that fights the mug.

A small order that works

One glazed donut, a pint of berries, six eggs, and a box of English breakfast. That is a weekend. Add yogurt only if someone in the house will eat it before Wednesday.

If you are ordering instead of walking in

Bakery is a morning product. Place the order for the first delivery window, not the 4 p.m. slot. Ask for no ice packs against the pastry. If a substitute appears, take another glazed — not a muffin “of equal value.” Equal value is how you get bran on a Saturday.
